If push comes to shove we could do an 11 team league, just ditch the divisions and set up playoffs as top 6 seeds, top 2 get first round bye.

Did a bit of quick Google-Fu. Other 11-team leagues have resolved this by creating a phantom team #12. Team #12 is considered to score the league average score for that week so that's the bogey for the team matched up against it each week. Obviously the phantom team is not playoff eligible. Would require a bit of extra work by the manager to manually input the results each week however.

elbosco to the rescue! Don't know how I would've felt about being the 11th and final team, yeah you could make it work but it might've been weird and I would have left it up to a vote before accepting... but who cares now!
