Nice work! :)

I'm making fettuccine. They had some awesome tomatoes and basil at the farmer's market today, so I decided to make an 100% from-scratch dinner. Made sauce, meatballs, and fettuccine...and the family quickly named the best thing I've made this year!

Now to hit the weight bench before I go to bed. Damn carbs :(

Sounds good. I've never used fresh pasta. I was gonna make pasta salad for lunch at work, but never got to it. Maybe tomorrow.

Can't you just buy it in a box for like a dollar?

What I've heard from people that know more than me, is you use fresh pasta for certain applications. Sometimes dried is more appropriate, and sometimes fresh is better.

Big difference. Fresh is made from all-purpose flour and eggs, where store bought is made with semolina flour and water. While dried pasta is good in some cases, home made is much more rich and sticky, lending itself well to thick sauces like bolognese and alfredo.

Damn, too slow. Also my favorite thing I made this year--was a variation on my typical arrabiata, where the GF made pork/beef meatballs with pinenuts. I never make meatballs, but holly that was delicious.

One thing I have learned over the years--rending the pancetta first, and cooking your green white and yellow things in the fat, makes a world of difference.

Awesome. My buddy was just in Italy with his wife (her parents still live there) and brought one of those back with him. He sent me pictures throughout the process just to bust my balls because I've been wanting one. This thread is making it much worse! What I was actually looking at is the attachment for the Kitchenaid mixers... It's the roller and the Cutter. Fresh pasta is so freakin' good.

I know ATOT is a concentration of the most elite an intelligent people of the human race, but seriously, the average person has never seen a pasta maker. They're just not that common anymore.
