Zalman VF700 vs. VF900 for 7900GT?

The VF-900 would be a significant upgrade from the 700 but not 2x the performance. I would say go with the VF-700 if your aim is to lower noise.

Yeah, the fan connection issue concerns me a little. I guess most connect to the motherboard? I wonder if I have a spare header...
 
Apparently it's easy to connect the card directly to the video cards fan header, I would just do that. In the thread they remove the plastic housing around the fan header on the board itself exposing the bare pins. I've actually done that before by simply trying to unplug the fan so it's easy enough to do, it also goes right back on.

Another option and what I was planning on doing was cutting the VF-700/900's 3-pin fan connector off and replacing it with the stock connector. All that is needed is a soldering iron and some heat shrink.
