I'm getting a Zalman CU cooler for my 1700. Planning on OCin up as high as possible but also trying to ensure 100% stability. I have an antec mid-tower case with the 2 120mm fans right next to the CPU. What do you consider the performance on this? Is it adequate for my needs? Should I go with something higher?

I suggest you look further. Consider something like a SLK800/SK7. The Zalman is mostly meant as a "quiet solution", not performance. It will be ok for moderate oc'ing, but that's it. ;)

Yeah, blade is right. I have the 6000 and it's best suited for making your computer quieter. For oc'ing, the slk is better.

how high do you think it would be possible to OC a Tbred Rev B 1700? I'm shooting for 2ghz hopefully... .

Any ideas?

I've been looking for the same thing, and I'm thinking that ~2GHz is going to be fairly easy. With a good quality heatsink, a good stepping, and a Vantec Tornado, many are getting around 2.1 - 2.2GHz.

I'd agree with the above suggestions as far as the Zalman. They're just not built for OC'ing. If you're concerned about noise, I'd get an SLK-900 with a 92mm Panaflo H1A. That will be pretty quiet while still pushing quite a bit of air.
