Z77 Mobos with Thunderbolt: Will they connect to the iPhone 5?

Nope... Lightning has nothing to do with Thunderbolt despite it's confusingly similar name.

Did they ever say what the other end of the cable has for a connector? Is it just USB?

The Apple accessory store sells a Lightning to USB cable so that's what I'm assuming the connection to the computer will be.

iPhone 5 is USB just like every other iPhone and every other phone for that matter. The only difference is the fancy name they gave to the end that goes in the phone. Not that it matters as there's virtually zero reason for a thunderbolt powered phone anyway.
