Z68 i5-2500k motherboard advice

I'm building a 2500k system with a single high-end graphics card. I will overclock with a 212 Evo. So far I've looked at the following motherboards:

pro3 gen3 for $110

extreme3 gen3 for $130
open box P8Z68-V for $145

The first one has everything I need, on paper... but I don't know anything about stability, exposed MOSFETS, overclocking controls, etc. Are the extra heatsinks important? Do I need PCIE 3.0? I thought motherboards either work or don't, but then why do people talk about "stability" like it's a variable thing? Reviews for ASRock are all over the place -- one said the Extreme4 Gen3 had terrible build quality, but the Extreme3 Gen3 gets praised. Why? I was tempted to just grab the ASUS because of company reputation, but that would be stupid. Are there even any reliable failure rates for motherboards? What the heck does all of this mean and which one should I get?

Asrock Z68 Extreme 3 Gen3 - excellent board. Don't even consider the open box. You would be lucky to even see the Backplate come with it..


Superbiiz has it for a few $$ cheaper.
