Yum.....Beef Tenderloin

Had a little 2 pound tenderloin in the fridge so I:

stuffed it with sauted spinache, onions, and mild cheese.
coated it liberally with ground ancho peppers and salt.

broiled it on a hot cast iron skillet at 550 for 20 minutes, flipping every 5 minutes.

Came out a perfect medium rare and DELICIOUS! :D

went really well with a homebrew too :beer:
 

That sounds so amazing...although I did have a homemade burrito with fire-roasted salsa for dinner tonight! :)

I was afraid you were going to kill it beyond dead by making in a G. Bush.. er Forman grill. I hate those things.
