Like blues-rock? Check out Chris Whitley's all-acoustic Dirt Floor CD ("Indian Summer", "Dirt Floor", "Accordingly").

Like celtic folk? Most of the Richard Thompson catalog sounds great acoustic, check out his Small Town Romance solo acoustic CD.

Like tasty pop-rock and can croon like Neil Finn? Crowded House, too many to name.

Feeling dark and spiteful? Elvis Costello's your guy. He did a nice solo acoustic "Deep Dark Truthful Mirror" on an interview for Spike.

In a classical mood? Check out Sharon Isbin's Bach CD, very beautiful playing.

well... if you're into jazz... kenny burrell is a monster on the guitar... head of ucla jazz department at that, so i get to hear him every once in a while... (ucla student here)

the deftones have a cool version of "be quiet and drive" that's acoustic.
hard to beat dashboard's so impossible EP, too.

Opeth - Dirge for November has some awesome Acoustic parts
Opeth - Harvest ..... about 1/2 of the song is acoustic guitar
Opeth - Bleak .. Some good acoustic parts

Pretty much anything Mikael Akerfeldt plays seems to kick arse .... (he also is the singer for Opeth, also sang in Bloodbath, Katatonia and, Edge of sanity)

you kinda have to like bluesy sounding metal to really get into Opeth ... and my brother says they are quite hard to play (he has played guitar for about 6 years)
