I make about $100 on a slow night (5-6hr shift). Most of those restaurant owners pay cash, something that they will never pay taxes on. Most of the time, my fellow co workers will work two or three shifts a day (since the owners don't trust too many employees, they will burn out the few they have). So next time you leave a 10% tip, you shouldn't beat yourself over it.
