Yet Another Steak Thread (Partial Failure)

Made myself a nice little steak today.


Put some rock salt onto it, and let it sit for about an hour and a half.

Wish I had a cast iron pan, but stainless steel works decently enough.
Did 2:30 a side on highest heat.

Nice browning, obviously middle doesn't have as much as I would like.
Afterward stuck it in a 475 degree oven for 2 minutes a side.

Partial Failure. The steak was more medium well, I was aiming for medium rare. I should drop the length of cooking to 2:00. Crust was damn awesome though, and it still tasted great.

Any other suggestions?

Do you have a grill?

This is how I grill my rib steaks:

1. high heat, lid closed
2. when grill temp is about 500 I put the steak on leaving the lid open and heat on high
3. 4-6 minutes per side depending on thickness
4. if flare up occurs for longer than a couple of seconds, move the steak somewhere else
5. take off heat and let sit for 5 to 10 minutes under tinfoil
