I have tried Oysters only a few times in my life, and i have never been very impressed. I have heard so many people talk about these little things like they are the best thing on earth....

I want to give them another shot, but I don't even know what I should be looking for.

What are the best ways to eat Oysters ?

What other foods go good with Oysters ?

What wines go good with Oysters ?

Is this a good time of year for Oysters ?

If raw, some cocktail sauce, lemon & tabasco on a cracker. If fried...french fries, onion rings, etc.

Fall/Winter months are the best for Gulf Oysters.

nb: I would only eat oysters in a gulf state, fresh shucked.

Probably. I wouldn't eat oysters in any area that didn't touch an ocean, sea, or gulf. And even then, nothing really compares to fresh Gulf oysters. I've had oysters at some of the nicest restaurants in NYC that didn't compare to those sold at dive bars in New Orleans.

the kind people retrieve out of a canal aren't that good.
 
I can only assume that local Oyster bars are having their Oysters shipped in ?? right ?

What kind of locations should I be looking for as the origin of imported Oysters ?

don't be such a homophobe....I drink wine with ALL kinds of different foods. I know absolutely NOTHING about Oysters, and I assumed that their would be a nice wine to accompany shell fish. There are certainly different types of wine that go well with other seafoods.

Anyway...good food is good food. I don't care if it makes me look ghey.

Hehe....I'll work on it. 😉

That's actually a pretty good article with regard to what wines would go with what. I'll add that, in general, the spicier the food, the more you'll want to lean toward a somewhat sweeter, full-bodied wine that won't be overpowered by the spice (sweet as in "more fruitiness" not "grape syrup white-zin-in-a-box crap"). I'll typically have something like a Reisling, Vouvray or Sancerre if we're having Thai or similar for dinner. If you're not going to go the hot sauce/horseradish route, then you can opt for something softer like a Pinot Blanc or Pinot Grigio so you can actually taste the oyster and not just the wine. Champagne is good too, for the record. Most people just have it when they're celebrating something, but it's very good with food as well.

If the oysters are "out of season" (which is not as important as it once was, before we had refrigeration and flash frozen seafood) or canned, might I recommend some Zatarain's Seasoned Fish Fry ?

Where are you?
If there is a McCormick and Schmicks Restaurant in your town I would suggest you try their oyster platter with 12 different oysters ...
 
To me nothing beats a Long Island Bluepoint. I love oysters from the northeast but hate pacific oysters (too briney) and gulf coast ones just seem alright.

I agree. Gulf oysters aren't my style. Never had a pacific one tho.
