Yellow american cheese melts white?

I'm making mac+cheese.

i'm using kraft yellow american cheese, and mixing it with elbow macroni.
as i stir, the cheese turns white. :Q

I wasn't aware that Kraft American Cheese (Product) melted. Rather, I thought it just dissassociated its molecular bonds and settled into a congealed mass of oil and other food products.
 
What you're seeing is the 'Melting Pot' effect of America. All colors melt into one unified color.

This is why we now use the 'Salad' metaphor. Each piece is unique while still adding to the whole.
