Would a gold colored door knob + gold colored deadbolt go better with the interior, or would a nickel colored door knob + nickel colored deadbolt go better?

Buy them all, hold them up to the door, turn the lights on... turn the lights off... see how it looks, return the ones you don't like 😉

I can tell you, though, that with a saffron, Gold/Brass probably will look the worst.

What color is the door itself?
 
I like the last one best. We have weathered bronze door handles on ours and they go well with out yellow living room, I think.
