Email is very impersonal.

That might have been a bad move. Not providing a specific date, or even an offer of one (I'd like to see you again soon) sounds kinda noncommittal. Damage control would be to wait a couple of days, then email her asking her to lunch/coffee on a specific day.

I take girls out on lunch dates all the time. Most of them all ready have b/f's lol. So it's mostly a friendly gesture than a date. Which seems like what you got yourself into. Looks like you are going to be friends for awhile as she seems shy or cautious.

And don't worry if she drops the "I have a b/f" bomb on you. Girls dump their moron b/fs as soon as they meet someone new anyway. Though in most cases like that you end up being friends for months or even years before anything happens.

Plant your seeds and hope one grows into a plant. Don't get caught up on one girl.
