So I just sold my Xbox 360 to a bidder with rather low but decent feedback. Hes located in Miami while I'm located in Sarasota(~4 hours away). He apparently works as a florist in Miami as that was the place I found by googling his work telephone #s. He seems legit although I don't want to take any chances.

He PP is verfied and he has sent me the money although I have not yet accepted it yet. Of course, he does want to have the xbox by christmas...

What should I do to prevent myself from getting ripped off?

there is a little bit of trust involved because it's ebay... you're just going to have to take the plunge and hope you don't get screwed.

just accept it. If he is verified, it is probably OK.
Otherwise, just tell him to get cash and meet him.

Ship it with a trackable carrier. Does anyone know if USPS with DC even counts?

Also remember for paypals seller protection
Require signature receipt on items equal to or more in value than $250.00 USD

Just tell him to meet you at a mutual location half way, so each of you only has to drive 2 hours. Get cash in person. This guarantees that he gets the package before Christmas, given that the USPS, UPS, FedEx, and DHL are CHOKED around the holidays. You don't have to worry about getting screwed over if he's one of those "get the item then revoke the PP payment" types. He has zero fears about getting the console before Christmas, you and he win.

If you're scared to send to a verified paypal member, you shouldn't be selling on ebay.
