Lately I've been using my car to haul some old stuff off and I'll leave it running in the yard for a few mins, and then I come back the next day and the grass under the car where the AC drips (or in that proximity from what I can tell) is brown. It usually comes back after a week or two...I thought maybe I was leaking oil, but I parked it on the cement and found nothing.

Is the condensation from the AC toxic or what?

A/C system condensation by itself would not be toxic. It could be mixing with something else, or more likely, you are leaking something like antifreeze..

if you have oil spilled or something on the engine compartment, the condensation could be picking that up, but idk

Yeah, I didn't think about coolant, I was thinking gasoline, but the grass wouldn't come back after a week or two if it was gasoline I wouldn't think.

if you were leaking gasoline, you'd know by now. in searing hot weather and engine - it'd go kaboom. i doubt it's gas.

check your fluid levels.

Hmmm, that would explain why it usually only happens when the car is on and not when I just park and turn it off...

Catalytic converters are hottest immediately after turning off the car.

Besides, the converter is usually around the middle section of the car, not near the engine compartment.
