Inspired by the KFC thread, I'm going to make some deep fried chicken. I've got a whole bunch of legs I need to eat up. They're not big pieces. Great for lunch tomorrow.

I usually deep fry fish, but I've never done chicken.

So, I've got some beer batter mix. Got my deep fryer. Got instructions on what temperature to cook them at. BUT, how long should I cook them for? Looked at countless recipes online but none say anything about cooking time.

25 to 30 minutes. in a deep fryer sounds normal. I test for doneness by pulling a piece out and mashing it with a fork. If the juices come out clear you're good to go.

No advice, just a random fried chicken based aside... Michael Symon is currently across the street from my office taping an episode for a Food Network show about which local chicken place has better fried chicken.

15 to 20 minutes in 350 degree oil is the standard recipe. The bigger the chicken, the more time it needs to cook.

I don't get 350 degrees. I've fried chicken many times. If I fry it at 350 degrees, it'll turn brown and get near burnt.

If I do it at 300-320~, it comes out perfect golden yellow crisp.

Why is this the case? I have a separate thermometer so it should be accurate.

a dude on DDD fried his cool, like 280 or so, for along time.

might have to do with the type of oil used. :shrug:


we did fried chicken for july 4, the first batch was darker, the next several were more golden. same temp.
