XP Pro & Home in boot file? There is only one partition?

Friends bought a Dell Dim 4700 and hosed it up when trying to load SBC Yahoo DSL software. Upon inspection I found all kinds of funny preinstalled software from Dell, of which they wanted none, so I said I would format and reinstall XP Pro. The pc came with home, so I popped in the Pro cd, rebooted and did a clean install. It had two partitions, one large, one small, I'm assuming for some sort of backup recover option from Dell? Anyway, I deleted all partitions and created one big one and proceeded to install.

Now upon reboot I get the boot loader asking if I want Pro or Home? How can it have any knowledge of home at all if I wiped everything out? Should I just edit the boot.ini file and remove home or reformat and reinstall?

Is it better to create one huge partition or two partitions, one for the OS (WinXP Pro) and one for the rest of the applications? And would a 6 GB partition be enough for the OS?
