I notice 5 or 6 different models, even a black edition. Does anyone know if there are just overclocked versions with the same hardware, or if they have upgraded HSF, etc?

They just go in and bump the core/shader/mem. Best deal ive seen is the EVGA 738 core clock for $289, i just got that. But if you are stuck on XFX, grab the middle overclocked one with the 720 core thats $299 and OC it some more.
