So, the only 360 I've played has been the ones in stores with demos. The thing I find frustrating with them is then between the time I choose the demo I want to play and the time I'm actually controlling a character, 2-5 full minutes have passed.

Is this normal, or demo-related only? A lot of it was disk loading, but I tried the Too Human demo at Target the other day, and there were an additional 3 game loading screens at a minute each before I got to play. All in all, it was 6 minutes between choosing the game and actually walking around (and just my luck, I played 20 seconds due to being bored.)

I rarely play consoles anymore due to this (I suppose I'm developing a bit of ADD in my old age,) but if a game is worthwhile - God of War 2, for example, I'll fire up the PS2.

So, is this a general 360 issue, in-store demo system issue, or just a truism with modern consoles (I own a Wii, and it's not too bad) ?

I was considering a 20/60GB Pro system for the kids for Xmas..

Yep, there are loading times and it is true of both the 360 and PS3. It depends on the game though. Some games have long load times, others have very little or they hide them during cutscenes. I recall Too Human being pretty bad about loading times but most are between 5-20 seconds.

The NXE update that is coming out on Monday will allow you to install the complete game to the hard drive. Depending on the game, there is either no change or it cuts loading times in half. Check the Official New Xbox Experience thread for a chart. Some PS3 games do a partial install to decrease loading times as well.
