If you don't need the All In Wonder features (TV Tuner) then the 6800GT/GS is by far the better choice in my opinion, it has a much better overclock overhead (at least the 6800GS has) and even without overclocking, the GT/GS is faster in OpenGL games and slightly slower in some DirectX games not too mention the GT/GS has HDR and Shader Model 3.0 and who doesn't love a good dose of eyecandy now and then.

Of course, if you are in need of a TV Tuner or could put a TV Tuner to good use the X800XT is not a bad choice, but strictly gaming wise, I would pick the 6800GT/GS.

AIW x800xt
Benchmark Summary: The All-In-Wonder X800 XT is every bit as fast as a standard Radeon X800 XT, and offers 85%-95% of the performance of ATI's current flagship Radeon X850 XT Platinum Edition. Throughout our entire suite of benchmarks, the All-In-Wonder X800 XT performed at virtually the same level as a standard Radeon X800 XT, and trailed behind only the X850 XT PE in most tests. The only exception was Doom 3, where the GeForce 6800 GT was also able to outpace the All-In-Wonder X800 XT.

very nice card, but still no SM3.0

The 6800GS/GT does have HDR/SM3.0 which is something to start keeping in mind at this point. The SM2.0 speed should be nearly the same regardless (or at least with GT or unlocked GS).
