Depends on your budget, goals, video card(s), etc.
I saw from your wish list that you will be getting the Q6600 and an 8800GTS (note that the 8800GT is apparently faster, cheaper, better, from what I read). I think that a P35 chipset board will handle that fine.

The X38: handles ECC ram, which you are not interested in based on the memory you chose.
PCI 2.0: this is good, but, there is still plenty of bandwidth in PCI one....

Our initial test results indicate that except for official 1600FSB support, there are not any real performance differences between the X38 and X48 chipsets at stock or mildly overclocked settings. This does not surprise us, as Intel's chipset guidance outline has not indicated anything differently. It was not until we started pushing both boards that we could tell a difference, even then it was minor for the most part.
1600 FSB = DDR3 = very expensive right now.
So, X38 is a slightly more capable P35; X48 is a jacked up slightly better than X38 chipset, that will cost a lot more.
I do not see anything in the X48 that is must have.....for X38, the PCIw 2.0 is good, but not essential....
