Filet or NY strip marinated in my own recipe of beer and other stuff, cooked over a charcoal grill with hickory chips.

Delmonico seasoned with Montreal steak seasoning ( I put it into a pepper grinder to get it very fine) over a charcoal/wood fire.

Take a standing rib roast. Slice it into individual ribs. Debone. Ya got it ;)

Actually, a standing rib roast is wonderful. I use Alton Brown's method from "Good Eats" (DAPUNISHER- take notes). Yummy!

My fav is a nice thick USDA Prime New York Striploin grilled on a super hot propane grill to medium rare. :Delicious:

New York cooked on a propane grill to avoid the solvent/charcoal by-products.

Thank god! I was considering setting up the web cam to see if I was slipping into a monkey suit and posting to myself ;)

Yes, by all means if you do turkey brine it. I usually do just a turkey breast, as a whole turkey is too much. Brining adds moistness and flavor. Alton Brown is my culinary hero, and I decided to give it a go. Can give particulars if interested, but I wont consider cooking one without brining. BTW the handiest gadget I have is a Polder probe thermometer. Indispensible for roasting. Cheap too.
