wtf is the difference between mild and sharp cheddar cheese?

As cheese ages, the flavor changes. It gets more intense. Mild cheese is sent to market as soon as it's ready, sharp cheese is left to age longer.

American cheese sucks (sorry guys, but it does). When I was over there a couple of years ago, I tried a few different varieties, and they all ended up tasting like our mild cheddar.

Applewood-smoked cheddar is pretty good, but Seriously Strong (a brand over here) is excellent; crumbly and very, very strong.
 
Sharp cheddar is more bitter with more intense flavor. Mild cheddar has the flavor, but it a little sweeter and dilluted/creamier.

Shredded extra sharp cheddar goes great on tacos...
 
sharp cheese has a wonderful more bold flavor than mild cheddar. Thats the best i can describe.
For me, i LOVE sharp aged cheddar. My favorite was a 10 year old cheddar i tried last summer.
Because it was so old, the flavor was intense, but not as bad as one might think!
Try a good sharp cheddar at least once.
 
The sharper the better. There used to be a cheese place in my grandmother's town that auctioned off all their stuff when they went under. She got this ungodly huge chunk of incredibly sharp cheddar, it was awesome. It had to have been at least a fifteen-twenty pound block.
 
Tillamook Extra Sharp special reserve, mmmmmmmmmm oh so good. It's a rather self explanatory description, the mild is....mild and the sharp is.........sharp(much more flavor).
