Most MMOs don't.
You know there is a huge difference visually when a developer attempts to make a game look realistic vs. one who attemps to make a game look cartoony.
I understand what you mean about cartoony graphics, but all the Warcraft games have been designed that way - it's a stylized choice on the designers' part. I realize some people are turned off by such, as it's simply a matter of personal taste.
To me, the graphics offer a much more thematic, clean, and consistent look than any other MMORPG. EQ2 may have "more realistic" graphics, but to me they are still jutty, blocky, and drab - they do more to detract from the game than to enhance it.
Also, I would guess that the "cartoony" style has a greater longevity than a "realistic" style. Compare Oblivion's graphics to EQ2. Realistic graphics continously improve, making only slightly-older games look like crap in comparison. Now compare Oblivion to WoW. The thing is, you really can't because they are two totally different styles, therefore it's harder to make WoW look "dated" by ever-changing technology.
I'm not sure if this was done on purpose or not, but it makes Blizzard geniuses, IMO. And for updates, rather than having to go back and update all teh model's poly-counts and textures, they can keep everything the same and add other elements, like the recent weather effects and additional spell-effect graphics.
