While I'll agree with the Unsaturated fat is some damn good stuff for you, and not surprisingly brains is a good source of unsaturated fat... but the whole there are two kinds of cholesterol thing doesn't really apply here. I don't think one can actually determine what variety of cholesterol is in food. What the health people state is you need to monitor LDL, have good intake of HDL (good cholesterol), and have a good but not too high intake of triglycerides (one glycerol, 3 fatty acids).
Watching LDL vs HDL is really a genetic thing. I don't believe cholesterol intake from food is considered either LDL or HDL, and you don't want to take in a high amount of cholesterol - the body actually makes all the cholesterol it needs. Increase fat consumption (sat. fat, trans fat) will play a role in heart problems and cholesterol levels as well.
HDL is specifically the blood serum content that removes cholesterol from cells, whereas LDL is what delivers cholesterol from the liver (where it is produced) to the cells. Cholesterol is necessary but I believe modifying HDL/LDL is going to be strictly medication and restricting cholesterol intake period, as increased cholesterol content means it is a higher fat food, since cholesterol is just one of the lipids in fatty content (animal meat and byproducts).
Basically, eating brains is the best way to get high levels of cholesterol. Because cell walls are made with phospholipids, cholesterol being one of the chief lipids in cell wall construction (and is why the body needs to deliver and retrieve cholesterol from cells across the body, and is why we make all that we need - eating more just means making less. Eating more than we make means we won't make any and now there is a problem - excess).
Brain matter won't have much actual fat, just fatty acids since they are also used in the construction of cells, specifically neural cells. Now doesn't that raise the idea that we need to increase fatty acids in our diet? Most people don't get enough fatty acids. Now, they might get some of the 18-carbon ALA, which the body can make the rest with, but getting ones like EPA/DHA (fish oil is high in these), will provide a direct nutrient for neural cell construction and repair.
Which is why I think a lot of mental health problems exist - a root cause could be improper care for our neural tissue through terrible dieting.
