I would have eaten them. When the shoots start growing they use water stored in the tuber and it starts to dehydrate. That's why it's wrinkled up. There's nothing wrong with it.

Yeah, I spotted a couple more too. Its actually the wife's camera. She keeps leaving it in the car all the time. I think the combination of extreme heat and extreme cold is ruining it. I'm getting her a canon 300d for xmas, so I'm gonna make sure she takes better care of that one!
