I watched a TV show many years ago where it showed how they prepared the cats. First they boil them alive (a quick dunk in boiling water) to get rid of the fur, then they cut the throat to bleed the cat out. I'm not sure why they boil the cats alive though. I think it was to preserve the flavor.

It supposedly releases a ton of adrenaline at the time of the death which supposedly increases the flavor..

I thought adrenaline toughened the meat.
