Would Raid 0 setup would be fastest?

I have a couple of choices, and I currently do some video capture, so I do need something fast. I don't really care about backing things up, so if I lose the data; it doesn't really matter. Here are my choices:

- (3) 320 gb Drives in RAID 0 + (1) 320 gb as Primary (for windows)

- (2) 500gb drives in RAID 0 - windows is on raid 0 drive.

If I put windows on the RAID drives, will programs lose performance?

I'd go with the 500gb setup for pure speed. But get ready to be bent over if one drive crashes.
