Would my rig be able to handle another 4870 for crossfire?

You can see my system specs in my signature. The PSU is rated at 760W max and 700W continuous with 4x12v rails at 18a each. Unfortunately it only has two pci-e outputs, and adding another 4870 would require me having four of them. Would it be safe to use two pcie splitters like this one?

I'm not planning this upgrade now, or even soon really. I'd just like to know if it's possible with my current PSU or not.

your 2 pci-e connectors look to be on its own 12v rail, 2 and 4 at 18A each. If you used a splitter on each like that, you'd be able to (theoretically) power 18A x 12V for each card, or 216W each. That will be plenty on the right rails for a couple 4870s

Awesome! I didn't really trust using the provided molex to pcie adapters anyhow. This will be great to know 6-9 months from now when I suspect RV790 and whatever Nvidia refresh will be out, driving down prices of the current lineup.
