Would it make sense to get a SLI mobo now w/ 1 card?

I was thinking when I build a system next year, to get a SLI motherboard and either a 280 or 260. Then when price drop more two years down the line get another one for SLI, instead of upgrading to the next generation. Is this a viable plan or is it just cheaper to go with a non-SLI mobo now and just pick up the next gen card in two years?

That.
Yep, although if the OP goes i7 next year, it wouldn't be a bad idea to just grab one of the X58 boards that support both CF and SLI.

He might not need another card, but could always use the 2nd pcie slot for a smaller physics card!
