Worth getting a gamecube just for RE: 4?

I imagine I would eventually get mario kart and the metriod games, but other than that I can't see myself buying much else for it though..

You have Metroid Prime 1 and 2 as well, both are excellent games. The Zelda series and a few more superb games.

I like to think of the GC as a party/multiplayer and single-player console whereas XBOX/PS2 are more one-person or two-person consoles.

Just for RE4, maybe not. But there are some great games for the system:

Eternal Darkness (WAY underrated)
Ikaruga
F-Zero
Monkey Ball
Metroid
Zelda
Paper Mario
Baiten Katos (or something like that)

And a few others, depending on taste. In my opinion, the GC is excellent. Most of the good X-Box games you can get on other systems, and Halo sucks compared to any decent PC shooter (plus you can get it on the PC anyway).
