Working with a new set-up - HDMI + / - Digital Optical Question

Okay;

What I've got:

PS3
New Toshiba TV with a pair o' HDMI ports, a composite, VGA port, couple RCA and a coax.
PC connected to the TV via VGA port. (groovy!)
2.1 sound system that isn't quite cutting the mustard anymore.

What I'm buying: HTIB, ~ $500 Budget,

How it works now:

PS3 hooked into TV using HDMI only; it just does it's thing in a merry little way using the TV speakers. They arent bad, but having a PS3 on it is like buying a ferarri chassis and having a Lada's engine in it... Looks pretty, and it certainly sounds 'okay', but it's certainly missing the high-octane performance for the ears.

PC is hooked up to the seperate 2.1 sound system; it has only one input - a PC input.

What I want:

PS3 to have 5.1 sound
PC to have 5.1 sound. (it is capable of this via soundcard using 2.5mm stereo jacks)
PS3 to not lose any picture quality in the receiver. - I have very sensitive eyes and I notice (and thus detest) even the slightest degredation

Now for simplicity sake, I was wondering if I attached a digital optical cable from the PS3 to the receiver, if the HDMI would stop outputting sound to the TV and use the Digital optical to the receiver... and if it would be satisfactory.

Hooking the computer up to the receiver shouldn't be too difficult, nor should basic sound output to the receiver from the TV for my analogue TV signal (such a waste :/)

So in a nutshell;

What would be the best way for me to go about getting my PS3 5.1 sound without the loss of any video quality. The PC's sound is secondary, but I'd prefer to consolidate sound systems if possible (and not have a 5.1 and 2.1 in the same 3 sq feet :p)

I'm open to suggestions, and I have no particular 'brand' I'm married to when it comes to sound.

Thanks for any and all help, and if you need any further info I'd be happy to provide it.

That's what I wanted to hear.

Anybody got any brands that would fit within that price range?

There really is only typically one asnwer to your question when someone wants 5.1 in that price range:

Onkyo 800
