What's better for building quad muscles - cycling or squatting - in terms of quickness to build ?

They build muscles differently since you're doing 90 reps per minute with very low resistance on a bike and the opposite with squats. If you just want size, squats will probably get you there quickest.

For power, squats. Remember that cycling that much will improve your cardio base quite a bit, though, so it's probably a wash if you are intending to improve your skating ability. I'd just split the difference and do both. 😀
