What about Acrobat are you actually learning ? Acrobat writer probably takes an hour to learn at most. I can't imagine how much this is costing your company...

Actually we have an account. It is REALLY cheap.....

they spend about 30 minutes at the beginning of every class going over intro stuff.

heh...one time the consulting company I worked for was in training for NT 3.51 or something. All of the machines were labeled Train1, Train2, etc. so it was easy to figure out who was sitting at which PC. Well, my boss decided to start messing around and using 'net send' to send us msgs and stuff. Well, he sent a msg to one guy but his PC had apparently been swapped at one point so the numbering scheme wasn't completely in order. It went to the trainer's PC. The message was, "This guy's a moron...I know 10x as much as he does and he's the trainer?" It showed up on the screen in front of the class! The instructor took it in stride by saying, "Now, I know we all know how to play around but let's just focus on this class, shall we?"

Isn't Acrobat pretty much just choosing the "Print to Adboe" option in any program and an Acrobat file is created?

No, not at all. It is really a versatile program.
