As I understand the new UAC options, you can also pre-configure "troublesome programs" to always run with Local Administrator rights. You don't have to totally disable UAC to do this. These settings are stored in User-specific virtual records, so that they can apply to a single program being run by a single User. You set this up once, and it's remembered next time you log in.
 
Use "Windows XP SP2 compatibility" mode. It fixed all the 'admin' problems I encountered (like with explore2fs).

Or maybe it was some admin option, whatever the case everything worked fine after that.
