Windows Server 2012 backup settings

I'm trying to get the automated backup on a new 2012 R2 Standard server to behave similar to the way the old backup functioned using Backup Exec on a 2003 SBS server. The old Backup Exec version doesn't work on server 2012 and they don't want to pay $1500 for a license for a new version so that's not an option even though it would make things easier.

This small office uses five different hard drives (one for each week day) that are swapped in and out of a SATA hot swap drive bay daily.

I have the 2012 backup program set up to include all five drives in the backup media set so it will back up to whatever drive is currently in the bay. However, I do NOT want it to back up anything over the weekends since nothing changes then, and it will just produce duplicate and unnecessary backups on the Friday drive. The problem I'm running in to is that as far as I can tell, the backup program only gives an option to either back up at one time each day (including weekends) or at multiple times each day (also including weekends). It doesn't have any options to say which days of the week are included in the backup schedule and which days are not included. Is there a way to adjust this setting somewhere so the backup schedule will skip Saturday and Sunday?

Also, is there a way to get this built in Windows Server Backup program to back up files from another computer on the network? This office has a workstation that runs an automated fax system and I would like to include the fax database in the backup but the source files selection screen only lets me choose items on the local server. I can have the workstation do its own backup each day putting a copy of the fax program files somewhere on the server and then include that backup in the server's backup but I'd rather just have it grab the files directly from the fax 'server' if possible.

Any ideas?

Or if the built in backup program can't do this, is there a third party backup program that will work, is appropriate for an office server, and that doesn't cost more than the whole server (Backup Exec single server license is around $1500)?

Macrium Reflect Server is $200. Its scheduler will let you pick which days you back up. I haven't tried it, but it looks like it will let you back up files on other computers on the network.
