How do you enable the showing of extensions?

I need to change a program to not open in notepad.

How do you undo the setting for always opening up a certain document with a certain file extension?

Ex: I have a file that isn't supposed to open with notepad, but I can't figure out how to change it so it opens w/a different program or asks which program I want to open it with.
 
Highlight the offending file, then hold down the shift key and right click on the file. Select open with...
 
can you undo a "open with this program" so it doesn't open it up with a program?

Hi,

For future reference you might want to look at the command line utility ASSOC. (Just type "assoc /?" at a CMD prompt to see what it does.) It provides a quick, easy way to DIS-associate an extension from an app so that it just shows the generic icon in Explorer and double-clicking brings up the Open With dialog.
