My guess is it's the Nvidia driver I updated last night but can't be sure. What do the codes mean and how do I address it?

Video driver is what I am pulling up for this error as well. Roll back to an older driver and see how it goes.

My screen went black at random and when it came back task manager showed "WinSAT.exe" running and sucking up a ton of processing power. I also noticed the bottom bar where my frequently used icons and the windows icon are turned from being transparent and showing part of my desktop background to solid cyan. Then it flickered back. Very strange.

Windows 7? That's just the weekly (usually really late Sun AM) WEI benchmark. It turns off the desktop Aero feature, which is why your taskbar got turned into a solid color, and WinSAT is the benchmark program. It hits the CPU, GPU, and Disk.
