Windows Fax and Scan - Change default save location in Win7?

On XP, when going through the scanning process, I could select which folder to save the scan too. Now with Windows 7, I'm getting no such option and it automatically saves in the default pictures directory. I tried using the Scan Routing to save to a network folder (desired location is on a mapped network drive) but it doesn't accept my path. So there's two problems:

1- Changing the default save location for scans in Windows Fax and Scan.

2- Scan Routing not accepting network locations multiple folders deep (i.e. I can use \\SERVER\SHARE but not \\SERVER\SHARE\FOLDER)
