Three missing options I've learnt about recently:
On older versions of Windows, it was reasonably easy to check whether a user's account password was set to expire after x days. MS removed this option from the Windows 8 UI, and it's apparently only possible to change it via the command prompt. Oddly enough, out of 9x Windows 8.1 machines I build and installed (intended to be in identical fashion), one had a standard user account set to expire, the others don't.
On older versions of Windows, I had a single set of instructions that I could give any user to get Windows to run a full disk check. However, in Windows 8.1, that option has disappeared (when you right-click on a drive, properties, tools, check, Windows starts doing a light disk check rather than giving the user the option to run a full check). Presumably if Windows notices a problem during the light check it would give the option for a full one, but I've seen plenty of light checks passed despite a full check picking up a problem.
On Windows 7 it was possible to find out wifi passwords if you had admin privs. On 8x the UI has been removed. I understand it's possible to query certain settings via the command prompt, but I'm not sure if finding out if showing the wifi password is one of them.
