Windows 7 & Mirror

Mirroring is not considered a good way to create a removeable, portable copy of files. If ANYTHING changes on either disk, the entire mirror will have to be rebuilt when the disk is re-instroduced to the system.

I suggest you run a backup or synchronization program between the two disks instead of using mirroring.
