windows 7 home premium on top of windows ultimate

I installed windows 7 ultimate on my wife's computer to see if she liked windows 7. the 30 day period is fast approaching and by this time, she's installed all her email, bookkeeping, favorites, etc and has things set up the way she wants.

I bought a copy of windows home premium from MS because she doesn't need all the windows ultimate stuff and its too expensive and want to know if there is some way I can install that on top of windows 7 ultimate to where it will work as a windows 7 premium copy so I don't have to try to back up all her data and then copy it back. I was thinking perhaps a registry key can be changed or something to where it thinks this is just a reinstall...

Any chance of this happening?
