windows 7 and fat32 in bootcamp...

so im on snow leopard, and i made a 60 gb bootcamp partition through the bootcamp assisstant, but when i insert the windows disc and restart, it gives an error message when i try to select the drive saying it only uses ntfs... and there is no other option for me to reformat or anything so now im confused as to how to install w7 on my mac...
 
What they don't tell you is this...

Repartition with BootCamp Assistant
Insert Windows Disk
Restart Mac
Hold C/Alt to boot from the disk
Once you get to the 'select your partition' screen, select the partition you made and FORMAT it.

Windows 7 requires NTFS and OS X cannot format NTFS by default, so it uses Windows XP. Apple has rudimentary NTFS write support in Snow Leopard, and hopefully 10.7 will have full support.
