They should be ok. There used to be an artificial limitation in place, but that has since passed. Both sets of drivers should be on there, Tyranicus has 7 64 on his newer MacBook Pro, and it worked fine with the Snow Leopard disk.

The mini is not on the list on apple's website as supporting Win7 64bit. So it looks like either their site is outdated or the mini is stuck using 32bit.

Here:
These Macs can use 64-bit editions of Windows Vista and Windows 7:
  • MacBook Pro (13-inch, Mid 2009)
  • MacBook Pro (15-inch, Early 2008) and later
  • MacBook Pro (17-inch, Early 2008) and later
  • Mac Pro (Early 2008) and later
  • iMac (21.5 inch, Late 2009)
  • iMac (27-inch, Late 2009)
  • iMac (27-inch, Quad Core, Late 2009)
  • MacBook (13-inch, Late 2009)

The processor is certainly 64 bit, the question is whether or not the EFI is. You might be better off with 7 32 unless you have both sets of media and want to spend the time trying out both.
