I'm going to need a OS for a new build and I was wondering which of these two OS I should get.
What kind of better control over updates does the Pro offer over the Home? With the Pro, can I choose to download security updates and not the features updates (as in select what I want to download within an update)? Or will I not have that flexibility and that the only difference between the Home vs Pro is that I can extend the download date? Also, do updates randomly install while I'm using my computer on Home? Or will it install when I'm shutting down?

What other advantages are there with the Pro that an average user will benefit? In terms of security, what other security features will I get with the Pro other than making files more encrypted? How about performance, any performance gains whatsoever with the Pro?
