Which one should I use? Which one is better. Is Win2000 just about identical to xppro?

If I have my windows kernels correct, win2000 and XP are both built on the NT kernel. Xp is of course the newer version tho. Based on my experience, XP is the better of the two, but I had to change the menus and visual components back to "classic" windows just for them to be bearable. Do you absolutely have to run windows? If not, you should try out a Linux Distro. Ubuntu or Fedora Core perhaps.

Considering that MS is about to drop all support for win2K, XP

I vote for XP too, but this is not at all true. Mainstream support ended June 30, but there is still five years of extended support (which is basically the same as mainstream, except changes to the code will not be made, eg bugs, design change requests, etc).
