Win 7 Pro and Server 2008 R2...I need some help.

I have a couple questions and I wasn't quite sure where this posts belongs. I'm building a small network of 8 workstations and 1 server. Workstations will have Win 7 Pro 64bit and server will have 2008 R2. I'm looking for a legitimate place to buy them as cheap as possible.

I personally run Win 7 Pro 64 bit. I have downloaded the trial of server 2008 R2 and have networked them to learn how they work with each other. I've created multiple domains on R2 and I'm looking for an easier way to switch between domains on the server side to setup security policies, and switch domains on the client side when logged into the server other than having to log off and back into the domain? Different staff members will be using the same workstation throughout the day. Staff members will have different clearance to run/access programs on the workstations and through the network. Rather then always having them log off and on depending on their location is there a way to switch between domains more easily?

I didn't know which section to put this in because of the needs I mentioned in the above two paragraphs. If it's wrong, mods can you help me out?😳
 
Each domain has a different set of security policies based upon which user logs into it. I guess I wasn't specific enough above. Some users have different security settings based upon their job description. Users are not always sitting at a specific workstation, but have the ability to be in a different area of the building/warehouse and yet have access to a computer to do their job, rather than having them walk all the way back to their workstation.
 
Sounds like someone way over thought that process. Group Policy on the same domain most likely would have been far better option.
