I've noticed that both of these processors seem to give similar performance, but the Intel processor is about $20 to $25 cheaper. Do you think folks will pay a premium for the AMD name?
AMD has the "gaming halo" right now, so people are willing to pay more for AMD. So, yes.Do you think folks will pay a premium for the AMD name?

They have the "gaming halo" right now with the 5xxx series. With the 3600, which was the comparison from the OP, not really.AMD has the "gaming halo" right now, so people are willing to pay more for AMD. So, yes.
Should you? Depends. AMD has been offering a more forward-looking socket for some time now. There may be a Zen3+ offering sometime soon as well.
If you're on a strict budget, though, Intel isn't the worst choice in the world.
The 11400F is the best value CPU on the market right now when paired with a H570 chipset based board.I've noticed that both of these processors seem to give similar performance, but the Intel processor is about $20 to $25 cheaper. Do you think folks will pay a premium for the AMD name?
The 11400F is a good value CPU right now but long term buying into the AM4 platform would likely be better.

Well, I can tell you, that, most likely, as the "silicon Shortage" continues, prices are only going to mostly go UP, over the next year. I've already watched the Pentium G6400 go from $59 to $99, along with a decline in availability. I've watched the 10100 go from $114 to $165.Just asking general question. I was hoping to upgrade my Ryzen about a year ago when the 3600 was about $180, but decided to wait until it fell to $160. Now it is even higher. I'm starting to see comparable Intel processors for less, so now when I'm thinking about building a new system, I'm kind of on the fence.....
Don't forget to add in motherboard price to that. While its not as much the case now, historically Intel motherboards have been more expensive than AMD boards.

Edit: Basically, if you want an 11th-Gen RocketLake CPU, I suggest getting it more-or-less NOW, while they have the intro sales.
Maybe not the top-end chip, as that was introduced at a higher price than the top-end 10th-gen, and there might be a "price correction" there.
