The fans are so loud, will my cpu over heat if i take the fan out and let it run without the fan blowing it?

Probably, yes. If the noise of the stock fans is bothering you, it may well be worth upgrading the fans on it- Noctua fans tend to be fairly quiet at the same time as moving a fair amount of air, and Scythe Gentle Typhoons are excellent high pressure fans for radiators.

Alternatively, it may be worth investing in a fan controller and plugging your fans into that. Would be more expensive, but you could control all your case fans from it, too, which could really reduce the noise levels of your system.

fan controller as suggested or if have room on your motherboard try pwm fans controlled by bios

the H100 has 3 different fans speeds with its built in fan controller on the pump/water block. Have you tried lowering it or are you unhappy with the noise level on the lowest setting?

My H80 with the lowest fan settings is very quiet, but I'd suppose you could get some Noctua fans like an above poster suggested.

Just use the 4 pin headers from the H100 unit itself and set it to the lowest by pressing the button. That should slow it down quite a bit. Having used the Noctua NF-P12's, they are undoubtably quiet but definitely not worth buying once you've considered its price and it doesn't move a whole lot of air. The Scythe GTs does a better job at that price.
